Technically, the Independence Day celebration on September 18, also known as El Dieciocho, which means "18" in Spanish. September brings spring in Chile, and on this day traditional festivals called fondos are organized to celebrate the first day of spring.
Much of the drinking, music and dancing takes place at the Fonda, a traditional establishment set up in a branch of a traditional lodging. Fondos are large open spaces prepared and often decorated for Fiestas Patrias, where traditional Chilean dishes and drinks are served.
For many years, Fonda La Grandiosa Bertita has been the chosen Fonda, but every year the Chilean president opens the Fiestas Patrias in one of these places. The predominant food associated with Fiesta Patria is Chilean empanadas, a type of bread or pastry. An empanada filling consists of hard-boiled eggs, cheese, meat and a variety of other toppings.
Friends and family will go to the Fonda to enjoy typical food and to see typical Chilean dances in traditional costume.
